Artichoke Mashed Potatoes
- 4 large potatoes
- 1 cup artichoke hearts
- 1-2 cloves garlic optional, pureed
- ½ cup warm milk
- Butter to taste
- Salt and pepper
- Peel and boil the potatoes until they are tender. Drain.
- Put the drained potatoes back in the pot and add the artichokes, garlic, and milk and mash thoroughly.
- Taste, add butter, salt and pepper to taste.
- Serve.
