Artichoke Mashed Potatoes
Serves: 3-4
 
Ingredients
  • 4 large potatoes
  • 1 cup artichoke hearts
  • 1-2 cloves garlic optional, pureed
  • ½ cup warm milk
  • Butter to taste
  • Salt and pepper
Instructions
  1. Peel and boil the potatoes until they are tender. Drain.
  2. Put the drained potatoes back in the pot and add the artichokes, garlic, and milk and mash thoroughly.
  3. Taste, add butter, salt and pepper to taste.
  4. Serve.
