Rhubarb Crisp
- Filling
- 4 cups rhubarb chopped
- ¾ cup sugar
- ¼ cup flour
- ½ teaspoon cinnamon (or more to taste)
- ½ teaspoon cardamom (optional)
- ½ cup water
- Topping
- 1 cup all-purpose flour
- 1 cup rolled oats
- ⅔ cup brown sugar
- ½ cup butter, melted
- Heat the oven to 375º degrees.
- Toss together the rhubarb, sugar, flour, spices and water and spread in a greased baking dish.
- Mix together flour, oats, brown sugar and melted butter until you have a lumpy looking topping.
- Distribute evenly over the filling.
- Bake for thirty minutes until the top is golden and you see bubbling on the bottom.
- Serves four to six.
