Hard Vegetable Quickles
- 2-3 cups radishes, carrots, turnips, shredded cabbage, winter squash, sliced or julienne
- 2 tablespoons kosher salt
- 1 cup water
- 1 cup vinegar
- 1 cup sugar
- Black pepper, capsicum peppers, garlic, mustard seeds, celery seeds,
- cloves, allspice, bay leaf to taste
- Bring to a boil, pour over prepped veges. Eat when cool.
- Store in the fridge.
